Eggs with vegetables.
✔ 8 oz vegetables, mixed squash, onion, tomato.
✔ 2 - 3 tbsp butter
✔ 4 sausage, smoked, sliced.
✔ 6 eggs
✔ greens, basil, celery
✔ 3 muffins, halved and toasted
salt, chopped greens to taste
1. Cook vegetables with milk and butter or margarine. Stir in sausages. Spoon into a greased casserole.
2. Break eggs, 1 at a time, into a cup, then pour each into vegetables mixture, spacing evenly. Sprinkle with paprika.
3. Season to taste and add chopped greens. Bake at 400 F for 20 min or until eggs are set and vegetables are hot. Serve immediately.
Makes 6 servings.
