Cucumber stuffed with eggs and onion.

3 fresh cucumbers, washed.
parsley leaves, and dill.

For stuffing:
1 tbsp dill, chopped.
1 tbsp parsley leaves, chopped.
1 onion, chopped.
3 - 5 tbsp mayonnaise.
3 eggs, hard boiled, chopped.
salt, mustard to taste.

1. Cut the cucumbers into halves horizontally. Take away seeds Scoop out the pulp and place in a mixing bowl. Set aside the scooped-out cucumbers.
2. Mix all ingredients with chopped eggs. Flavour with parsley, dill, mayonnaise and salt. Stir well.
3. Fill the scooped-out cucumbers with the stuffing.  Decorate the stuffed cucumber with parsley leaves and dill.
