Potato nettles with mushrooms Cutlets
1 lb mushrooms, boiled, grained
1 cup mashed potatoes
nettles, finely chopped
1 egg, beaten
1 onion, chopped very finely
ginger, chopped very finely
salt, ground pepper and greenery to taste.
1. Combine all ingredients. Shape into cutlets. Place cutlets in a preheated heavy frying pan which contains hot oil.
2. Fry at moderate heat. When cutlets are brown on one side, turn carefully and brown on the other side. Cooking time, approximately 5 to 8 minutes. Serve immediately. Serves 6 - 7.
